Asian Inpired Chicken and Beans Stew
I don’t get what people mean when they say – Comfort Food or Soul Food. I mean we eat to nourish ourselves or at least that’s what the entire animal kingdom has been doing since the world began and how is it possible that our souls will taste and digest what food we eat! I wonder if my soul burps after it eats! They don’t even make sense! I mean these terms are so bad they can’t even be called Foodie Jargon!
The recipe I want to share with you today is an utter no-nonsense, wholesome and super easy to make. It’s one of my healthy recipes – All the goodness of fresh Beans and my winter favorite Bok Choy, fiber, protein and lots more of the good stuff!
Here’s what you need to make Asian Style Chicken and Beans Stew –
Ingredients for Three Servings –
Chicken – 250 Grams Medium Size Pieces
Beans – 200 Grams Cut into 2 cm Long Pieces
Bok Choy – 1 Medium Chopped, Leaves, and Stems Separated
Garlic – 2 Cloves Crushed
Black Pepper – 1/4 Teaspoon
Salt – To Taste
Oyster Sauce – 2 Tablespoons
Dark Soy Sauce – 1 Tablespoon
Corn Starch – 1 Tablespoon
Water – 2 Cups
Let’s get Cooking –
In your Asian Street Food Wok, add 2 Cups of Water and bring to a boil. Add Chicken pieces, Salt and Pepper. Cover and let Chicken boil for 15 minutes on medium-high heat.
After 15 minutes add Oyster Sauce and Soy Sauce and let the Stew simmer for another 5 minutes. Stir well.
After 5 minutes add the chopped Beans and Bok Choy Stems. Turn heat up high. We do not want to cook the Beans and Bok Choy all the way through. Stir well.
Around 10 minutes after adding Beans and Bok Choy Stems, add the Bok Choy leaves. The Bok Choy leaves will hardly take 2 minutes to cook.
1 Minute after adding the Bok Choy leaves, make a slurry of the Corn Starch and a little bit of water. Add to stew and stir well. Check seasoning and adjust f need be.
Allow to thicken and serve immediately with steamed rice. Enjoy!
