Chicken And Bok Choy Stir Fry

Every now and then I like to surprise my wife with a delicious Chinese-inspired dish for lunch. Today happened to be one such day and this recipe turned out better than I expected. I thank God for that! He is definitely showing me great and mighty things in the wonderful skill of cooking which He has blessed me with!

It’s cooling down here now and so a lot of lovely fresh green vegetables are available now which otherwise are not available all year round. It was a sheer delight going to the fresh market near my house and I found a vendor with this amazingly fresh Bok Choy! I knew right then that I just had to make this delicious Chicken Recipe.

The distinct Bok Choy flavor added so much to the dish in terms of taste, color and texture. I also added a fistful of fresh garlic chives and that took the entire dish up a couple of notches! Dear reader if you follow all my instructions carefully then you too will end up with one of the most awesome Chinese-inspired dish that you’ll ever make!

Let’s crack on with this Recipe!

Ingredients for Two very generous servings:

Chicken White – 200 Grams Thinly Sliced to around 2mm Thick
Bok Choy – 1 Medium Sized, Chopped to about 3cm in Size. Stems and Leaves Separated
Garlic Chives – 1/2 Cup
Spring Onions – 1/4th Cup
Ginger – 1/2 Teaspoon Finely Chopped
Garlic – 1 Teaspoon Finely Chopped
Oyster Sauce – 3 Tablespoons
Green Chilies – 3 Cut into Thin Strips
Salt – To Taste
MSG (Optional)- 1 Pinch
Sugar – 1/4th Teaspoon
Corn Starch – 3 Tablespoons
Dark Soy Sauce – 1 Tablespoon
Freshly Ground Pepper – 1/4th Teaspoon
Egg – 1 Large Beaten
Cooking Oil – Enough for Deep-Frying Chicken

Let’s prepare the Chicken for Deep-Frying:

In a bowl add the Chicken Pieces and Beaten Egg. Mix well. Add Pepper, MSG and Soy Sauce and mix really well. Set aside for half an hour.

After half an hour, add Salt to the Chicken Pieces and mix. If Salt is added earlier, it will draw out the water from the Chicken Pieces making them dry after cooking. Then add the Corn Starch and mix really well. The Chicken Pieces should be coated evenly. Add 1 Tablespoon of Cooking Oil and mix really well. Adding Oil to this mix will not let the Chicken Pieces stick together when they are being fried. 

Place your Wok on the stove with the heat turned up high. Add enough Oil in it for deep-frying. Once the oil is hot enough, add the Chicken Pieces slowly and one by one into the Wok. Do not over crowd the wok as the Chicken Pieces will not fry properly. Deep-fry the Chicken Pieces on high heat and stir from time to time to allow the pieces to cook evenly.

After about Three Minutes remove the Chicken Pieces from the wok and set aside and let them stand for Fifteen Minutes. We are going to fry the Chicken twice to get it nice and crispy.

After fifteen minutes drop in the Chicken Pieces carefully into the Wok on high heat. Deep-fry for Four to Five minutes more maximum. Remove from Wok and set aside. Ooh yeah taste a piece of Chicken. It will be crispy on the outside and moist and juicy on the inside! If you have followed my instructions thoroughly then you will be very happy with the result so far!

Empty out most of the Oil from the Wok, leaving about Two Tablespoons of oil in it. With the heat on high, drop on the Bok Choy stems carefully and sauté for a minute. Remove from Wok and set aside.

Now we need to move quickly. Lower the heat to absolutely low. Add the Garlic, Ginger and Green Chilies and saute till fragrant. Add the Bok Choy Leaves and Onion and Garlic Chives now. Sauté for a minute and turn heat up high. Add Salt as per preference and add Sugar. Add Oyster Sauce and stir for Thirty Seconds more. We never want our vegetables over cooked. We need them with a bit of crunch still in them. 

Turn heat down low and add in Chicken Pieces and Bok Choy Stems. Stir well. And this Amazing Recipe is done! The amount of flavor packed in this recipe is simply mind blowing. It has all the goodness of Bok Choy which has no fat content but yet is abundant with almost all the necessary vitamins, minerals, protein and dietary fiber which we need!
