Chicken with Carrot and Baby Spinach

I love it when a recipe comes together! I love it more when all the flavors are beautifully balanced! This is Chinese inspired cooking at its very best. Succulent and tender chicken pieces cooked together with new carrot slices sitting on a bed of baby spinach. Truly mouth-watering!

Here’s how you make this wonderful Chinese Recipe (I’m pretty sure it’s good enough to be on a decent Chinese Restaurant Menu!):

Ingredients for Two Servings: 

Chicken – 250 Grams Cut on the Dias into Bite Sized Pieces
Carrots – 2 Small Carrots Cut on the Dias into 3 mm Slices
Chicken Stock – 1/2 Cup
Baby Spinach – 2 Cups Roughly Chopped
Ginger – 1/2 Teaspoon
Garlic – 1 Teaspoon
Fresh Red Chillies – 1 Finely Chopped
Corn Starch – 4 Tablespoons
Sesame Seeds – 1/4th Teaspoon
Cooking Oil – For Deep Frying and Sautéing
Garlic Powder – 1/2 Teaspoon
White Pepper – A Pinch
Sesame Oil – 1/4th Teaspoon
Salt – To Taste
Sugar – 1/2 Teaspoon
MSG – Less Than 1/4th Teaspoon
Soy Sauce – 2 Tablespoons
Water – 1 Cup

The Prep work for this recipe is quite simple so let’s get started: 

Place the Chicken Pieces in a Bowl and to it add a pinch of MSG, Salt as per your preference, the White Pepper, the Sesame Oil and Garlic Powder. Mix well to make sure the Chicken is evenly coated.

Super Tip Time: Now add 4 Tablespoons of water to the Chicken and mix really well and set aside for 1/2 an hour. After half an hour you’ll see that the Chicken has absorbed most of the water which will make it moist and soft and juicy and delicious and tender. So don’t skip this step! 

While the Chicken is absorbing all those awesome flavors, chop the Chillies, Ginger and Garlic fine. Roughly Chop the Baby Spinach and carefully slice the Carrots.

After half an hour stir the Chicken gently and you’ll see that most of the water has been absorbed! So now add about 1 and 1/2 Tablespoons of Corn starch to the Chicken and mix in really well. Now to this add  one teaspoon of cooking oil and mix really well. The oil will prevent the pieces from sticking together when frying. 

Make a Slurry with 1/4th Cup of water and 2 Tablespoons of Corn Starch and keep aside.

Lightly toast the Sesame Seeds.

Our prep is done so let’s get Cooking: 

Place a wok on the stove and turn the heat up high. Add enough oil to deep fry the Chicken Pieces. Once the oil is hot enough place the pieces of Chicken and fry till golden brown. This should not take more than six or seven minutes on high heat. Keep stirring the Chicken when frying so that they get an even golden brown color which means that they are cooked evenly.

Taste a piece of the fried Chicken. It will be all those wonderful things which i described earlier!!

Empty out most of the oil from the wok and leave just about a teaspoon of oil in the wok. Turn the heat up high. Immediately add 1/4th Teaspoon of chopped Garlic and some chopped Chillies and a couple of seconds later throw in all the Baby Spinach. Sauté on high heat for two minutes and remove from heat. We just want to remove the rawness from the leaves.

Add a teaspoon of Oil to the wok and keep the heat high. Throw in the carrot slices and stir occasionally. Cook for 3 to 4 minutes and remove from heat. The carrot slices need to be only half-cooked at this stage.

Now add about 2 teaspoons of Oil to the wok and keep the heat on low. Add the chopped Ginger, Garlic and Chillies. Cook till fragrant. At this point add the Chicken Stock and turn the heat up high.

Add Salt, Sugar, remaining MSG and Soy Sauce and stir really well. Throw in the partially cooked Carrot Slices at this point. Let the Carrot Slices cook for only 2 minutes on high flame. Lower the heat to medium high when the Carrot Slices are cooking. If the Chicken Stock has become less than add 1/4th Cup of Water.

Add the Slurry exactly after two minutes of adding the Carrot Slices and turn the heat up high. Turn the heat off when Slurry thickens and a nice shiny and thick gravy has formed. Add the fried Chicken Pieces and coat well with the gravy.

On a serving plate, make a flat-bed with the sautéed Baby Spinach Leaves and spoon the wonderful Chicken Pieces and Carrot Slices on top of it. Sprinkle toasted Sesame seeds over it and it’s ready to be enjoyed!

When eaten all together the flavors of Carrot with the juicy fried Chicken Pieces and Baby Spinach leaves are amazing!
