I have always loved Brownies. My love for them began many years ago. Back then there were probably one or two decent cake chops which actually sold Brownies and for me it was love at first sight with just one bite. I was about fourteen years old then and I promised myself that one day I would make excellent Brownies.
I used to rely on cook books for most of my cooking adventures. I was too young to be able to afford to buy cook books so I would spend hours in book stores trying to memorize recipes. I would rush home and try my best to replicate them but was pretty unsuccessful in almost every recipe. I realized the hard and expensive way (my mother always bought all the ingredients I wanted) that many cook book authors would leave out key ingredients or techniques which were crucial to a successful recipe. So I gave up on cook books and decided to experiment on how to make the perfect Brownies my way.
After several trials I finally made something which was remarkably close to the actual brownie! My joy knew no end! I made it several times again and each time tweaked and fiddled around with the ingredients, oven temperature and techniques and finally about six months later came up with a pretty decent brownie. After several years of making them and after a lot of head scratching and tasting many Brownies I have perfected what I call a Fudge Brownie.
Here is the most Authentic recipe for Fudge Brownies. It’s simple, no fuss and really quick to make:
Semi Sweet Chocolate – 350 Grams
Butter – 120 Grams
Eggs – 3 Large
Granulated Sugar – 200 Grams
Vanilla Extract – 1 Teaspoon
Flour – 100 Grams
Baking Powder – 1/2 Teaspoon
Preheat oven to 180° C.
In a double boiler on medium heat, melt the Chocolate and Butter together. Once done, turn off heat and leave to cool.
In a large bowl whisk together Eggs, Granulated Sugar and Vanilla Extract till frothy. The Granulated Sugar does not have to melt and can remain whole. It will melt in the baking process and add the gooey to Gooey Fudge Brownies.
Fold in melted Chocolate and Butter mixture. Make sure this mixture is at room temperature otherwise the Eggs will cook. You’ll then have bits of scrambled Egg in your brownies!
Next add in the Flour and Baking Powder and fold till all combined.
Line a nine inch baking tray with cake paper and pour in mixture. Pick up the tray very slowly and tap gently. This will release trapped air and level out the mixture. Remember Brownies are not fluffy and light but rather dense and gooey.
Place in oven and bake for 30 minutes at 180° C. Insert tester and if it comes out with a bit of Brownie mixture on it with a few crumbs then it’s done!
Place on wire rack and allow to cool completely before cutting into squares or any shape which you desire.
These Fudge Brownies easily beast store bought ones by miles. They are a joy to make and a pleasure to eat! Brownies make one of the most popular desserts in the world ever. Serve with a large dollop vanilla ice cream and hot chocolate sauce and relish them with your friends and family!
You can also add walnuts to them to make these Fudge Brownies even more authentic and store like.
