Who doesn’t like a cup of tea in the afternoon? Milk, sugar and all! And if you’re seriously into afternoon tea breaks then I’ve got the ideal tea accompaniment for you – Raisin and Date Cake! It’s pretty much my version all the way and it’s definitely worth a try. I’m sure you’ll love it and make it over and over again.
I could tell you all about the wonderful grainy texture which Dates add and could also tell you about the mellow sweetness which Raisins have but what I will tell you and stress on is that cakes are very fattening and can make you put on weight like nothing else can! So post your afternoon tea please do go for a short walk or opt for the stairs instead of using the elevator.
With that being said let’s crack on with making this delicious cake!
Ingredients for 8 – 10 Servings:
Dates – 1 and 1/4th Cup Deseeded and Chopped Fine
Raisins – 3/4th Cup Whole or Roughly Chopped
Castor Sugar – 60 Grams
Demerara Sugar – 60 Grams
Flour – 400 Grams
Baking Powder – 2 and 1/2 Teaspoons
Eggs – 4 Large
Vanilla Extract – 1 and 1/2 Teaspoons
Milk – 160 ml
Butter – 150 Grams
Preheat oven to 160° C.
Sieve the Flour into a bowl and add Baking Powder. Set aside.
In a large bowl cream the Butter, Demerara Sugar and Castor Sugar till light and fluffy. Add the Eggs one by one and whisk till light and airy.
Gradually add a third of the Flour and fold into Egg, Butter and Sugar mixture. Add in half the Milk and fold in gently. Add in another part of Flour and fold into mixture. Add remaining Milk and fold. Add remaining Flour and fold.
Add Vanilla Extract. Add Chopped Dates and Raisins and fold into mixture.
Line two rectangle cake tins with cake paper and pour in mixture. Smooth with spatula or back of spoon.
Place in oven and bake for 45 minutes or till tops of cakes are brown and tester comes out clean.
Place on wire rack to cool. Once cooled down completely, slice and serve with a hot cup of chai!
