Seasonal Vegetables in White Sauce

Winter is such a fantastic time of the year! The weather is amazing and because of the amazing weather we get super amazing vegetables which we don’t get to see all year round! I do hope that we have an awesome winter this year and get to eat the very best of vegetables which nature has to offer!

This recipe has all the goodness of extremely fresh Chayote Squash, Fresh Carrots and Bok Choy! This dish is packed with a whole bunch of nutrients, vitamins, minerals, proteins and tastes great! To make this a completely vegetarian dish you can substitute the chicken stock which I had used with vegetable stock.

Ingredients for 3 Servings:

Chayote Squash – 1 Medium Sized Cut in Half and then Sliced
Bok Choy – 2 Medium Sized Leaves and Stems Chopped and Separated
Fresh Carrots – 2 Medium Sliced on the Bias
Garlic – 1/2 Teaspoon Finely Chopped
Ginger – 1/2 Teaspoon Finely Chopped
Sesame Seeds – 1/4th Teaspoon Lightly Toasted
Spring Onions – 2 Tablespoons Finely Sliced
Salt – To Taste
Pepper – 1/4th Teaspoon
Sugar – 1/2 Teaspoon
Chicken Stock – 1 Cup
Corn Starch – 2 Tablespoons
Cooking Oil – 1 Tablespoon

Let’s get cooking!

In a Wok, add the  Oil and turn heat to low. Add chopped Garlic and Ginger and sauté until fragrant. Add the Sliced Carrots and Squash and stir. Add Salt, Sugar and stir well. Cover and let cook on medium-high heat for 2 to 3 minutes. Stir occasionally so that the vegetables cook evenly.

After 2 to 3 minutes remove the cover and add Chicken Stock and stir well. Cover and let simmer for 10 to 12 minutes. Add the Bok Choy Stems now and stir. Cover and let cook for 3 to 4 minutes. Add Bok Choy Leaves now. Stir carefully so as to not break up vegetables.

Once the Bok Choy Leaves are half done, make a slurry with the Corn Starch by adding 3 Tablespoons of water to it. Mix well and add to vegetables. Stir slowly as the water in the vegetables thickens up. Once desired thickness has been achieved (See picture above), add Spring Onions, Pepper and Toasted Sesame seeds and mix well.
