So you think making a Zebra Cake involves some terrific technique and skill? Does this jazzy tea time cake look intimidating to make? Well, I’m here to prove you absolutely wrong and I’m also here to give you the best #TriedandTestedRecipe for Zebra Cake! All you need is a bit of patience and of course the ingredients to make this awesome recipe! Just follow all the steps given in this recipe carefully and you’ll be able to instill awe in your friends and family just like we did!
Flour – 365 Grams + 1 Tablespoon Separately
Cocoa Powder – 2 Heaped Tablespoons
Baking Powder – 2 and 1/2 Teaspoons
Caster Sugar – 400 Grams
Eggs – 4 Large at Room Temperature
Vanilla Extract – 1 and 1/2 Teaspoons
Milk – 160 ml
Butter – 160 Grams
You will need a 9″ Baking Tray lined with cake paper or dusted with oil and flour.
Next, pre-heat your oven to 160° C.
In a bowl, sieve in the Flour and Baking Powder and set aside.
Now in a large bowl, cream together the Butter and Caster Sugar. Add the Sugar in three additions. You can use a hand mixer which is very handy (now this is a terrible pun!) on low speed and increase speed once all the Sugar is incorporated into the Butter.
Add in Eggs one at a time and whisk away till a fluffy and creamy mix has been reached. Add Vanilla Extract and mix.
Fold in Flour and Baking powder mix in three additions. Add milk in two additions, starting and ending with Flour additions. Be sure to scrape down the sides of the bowl and ensure that there are no lumps in the cake batter.
Once done, separate half the batter into another bowl and to it add the Cocoa Powder and fold in well. To the other bowl, add the 15 Grams of Flour and fold in slowly.
Now here is the part which takes a bit of patience but which is also a lot of fun to do! Place One equal sized spoon, preferably serving spoons, into each bowl of batter. In your lined baking tray, add Three spoons of the Plain Cake batter. Follow that up with Three spoons of Chocolate batter right in the middle of the Plain Cake Batter. Keep doing so till half the batter in each of the bowls has finished.
Now add two Spoons of Batter into the tray. Pour the batter in slowly and make sure that you are pouring it in the center of the tray. This is very important do follow otherwise your Zebra Cake will not get those awesome zebra-like stripes! You will see that on the surface, lines have formed which starts to give this cake it’s zebra-like stripe appearance.
Once you are left with about quarter of the batter in each of the bowls, switch to pouring just one spoon of the two batters in the middle of the tray. Do this till all your batter has finished.
Now place your tray in the oven and make for 45 minutes at 160° C or till a cake tester comes out completely clean. If your Zebra Cake is still not baked fully after 45 minutes then bake for 10 to 15 minutes more checking every 5 minutes to see if its done or not.
Once done, remove from oven and place on cooling rack. 10 minutes after the cake has been removed from the oven, take it out of the tray and place back on cooling rack to cool completely.
Wait till the cake ha cooled off completely before slicing it. You’ll see that the cake has lovely zebra-like stripes all through it just like in the photograph alongside! Now wasn’t that easy to make? No special skills or techniques required at all!
